A Sustainable Legacy on the banks of the mighty River Ness
In 2018, Jon & Victoria purchased The Waterside Hotel & Restaurant to expand their portfolio and increase the size of the Glen Mhor Hotel. They wanted to create an elegant space offering delicious food while minimising their environmental impact and supporting the local community.
They have renovated the space to make it more energy-efficient and sustainable while forging partnerships with local farmers and suppliers to ensure their ingredients are ethically sourced and organic wherever possible. Today, our restaurant reflects its dedication to sustainability, from composting and recycling programs to using renewable energy sources and local suppliers.
